Classic bruschetta with tomatoes and basil

Here's a classic bruschetta recipe with tomatoes and basil:

Ingredients:

  • 1 French baguette or Italian ciabatta
  • 4 ripe tomatoes, diced
  • 2 cloves garlic, minced (plus 1 whole clove for rubbing)
  • Fresh basil leaves, chopped (about ¼ cup)
  • 2-3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Balsamic vinegar (optional)

Instructions:

  1. Prepare the Tomato Mixture:

    • In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper. Mix gently and let it sit for about 15-20 minutes to allow the flavors to meld.
  2. Prepare the Bread:

    • Preheat your oven to 400°F (200°C).
    • Slice the baguette or ciabatta into 1/2-inch thick slices.
    • Arrange the slices on a baking sheet and brush each side lightly with olive oil.
  3. Toast the Bread:

    • Bake in the preheated oven for about 5-7 minutes, or until golden brown and crisp. You can flip the slices halfway through for even toasting.
  4. Assemble the Bruschetta:

    • Once toasted, remove the bread from the oven. Rub one side of each slice with the whole garlic clove for extra flavor.
    • Spoon the tomato mixture generously onto the toasted side of each slice.
  5. Serve:

    • Drizzle with a bit more olive oil or balsamic vinegar if desired. Garnish with additional basil leaves.
    • Serve immediately as an appetizer or snack.

Enjoy your delicious bruschetta!
